Cynara cardunculus

A striking addition to any garden, cardoon is often appreciated for its architectural beauty and bold leaf structures. Growing up to 5 ft. tall and 4 ft. wide, its large, dagger-shaped gray-green leaves form a statuesque frame that stands out amid more traditional plantings. This heirloom vegetable, a close cousin to the artichoke, was once a staple in Mediterranean gardening and is enjoying a resurgence among modern gardeners due to its unique aesthetic and edible stalks.

Size: Mature plants reach heights of up to 5 ft. with a spread of 4 ft.

Yield: Produces crisp, succulent leafstalks throughout the growing season.

Taste: The flavor profile of cardoon leaves is reminiscent of artichoke, with the stalks suitable for various culinary applications.

How to use: Ideal for soups, stews, or sauted with garlic. The stalks can also be blanched and eaten cold with dips.

Planting tips: Start seeds 10 to 12 weeks before the planned transplant date. Germination is best at 20 to 25C, requiring light watering and nutrient-rich soil. Once hardened off, transplant outdoors after the last frost, spacing plants at least 5 ft. apart.

Harvest tips: Wait until the stalks are large enough to pick. They can be harvested throughout the growing season. Cover seedlings lightly in case of early frosts to protect them.
