Red Noodle Yard Long Bean (Vigna unguiculata)

Purple blossoms and stringless, scarlet pods flourish on sturdy vines that stretch to 8 tall. This Chinese heirloom yields 18-22 beans that are best harvested when young and tender. Beans change from red to green once cooked and are most delicious sauted and in stir-fries.

• Maturity: 80 days
• Soak seeds for 12 hours then direct sow 1-1 deep in full sun after last spring frost or 100 days before first fall frost. Beans need soil temperatures between 75-85 F to sprout.
